Mild Spiced Chickpea, Tomato & Coconut Soup

It is so cold and wet out there. Well, it is here in Villierstown in West Waterford. They call this part of the world the “Sunny South-East”! I have a good mind to go and paint over the road signs that say that. Anyway, back in from my 5.5km walk, yes in the cold and rain, I needed something quick, easy and warm. Opened the cupboard to find a few cans of tomatoes, chickpeas & coconut milk & with a little bash and smash, I threw together this tasty gluten-free vegan soup.

What I like most about this soup is how easy it is to make, some roughly chopped onion, some smashed garlic open a few cans and hey presto, within 30 minutes, you will have a chunky bowl of soup – As we like to say in Ireland “there is eating & drinking in it”
